Baking day




Chocolate Walnut Biscotti were somewhat biscotti-like, not as hard as it should be but it's got the good chewy crunch to it, crispy on the outside.



These oatmeal with walnut cookies were a fail! never again NEVER!!! Well maybe it would be better when I didn't burn it... hahahaaa!!!






Apparently, this coconut macaroon I made for the first time is the best macaroons that my parents have ever eaten. Even better than the grocery store ones =) and I thought Superstore coconut macaroons are awesome but mine is better =p

Coconut Macaroons
4 large (120 grams) egg whites
1 cup (200 grams) granulated white sugar
1/4 teaspoon salt
1 teaspoon pure vanilla extract
1/2 cup )65 grams) cake flour
2 1/2 cups (220 grams) sweetened coconut

Whisk together egg whites, sugar, and salt in a stainless steel bowl over simmering water until mixture is warm to the touch. Remove from heat. Stir in the vanilla extract, flour, and coconut. Cover and refrigerate for an hour until dough is firm. Preheat over the 325 degrees F and grease 2 baking sheets. Place 1 tablespon of the dough on baking sheet with several inches apart for spacing. Bake for 15-20 minutes until golden brown. Makes about 2 dozen Macaroons






My banana bread on the other hand turned out great, if it wasn't for the extra dark exterior. Otherwise, the inside is moist and sweetness is just right. My mom doesn't like too sweet of a dessert, so this is good =)





My chocolate chip cookies are all time favorite still, it never goes wrong (well my second batch kinda went wrong because it was undercooked and so I decided to leave it in the oven for a bit longer, except I kinda had to run some errands and didn't have a chance to take it out the oven when I was out of the house). First batch though is awesome. Second batch turned out to be very crispy, good thing my older sister likes crispy cookies.
